Access 2010 - getting Menubars and Toolbars back

How can I retain the menu items and toolbars in an application that is being converted from Access 2003 to Access 2010 and somehow not use the ribbon?

Any commands not supported by Access 2007...

I don't think there is an exhaustive list anywhere, I just posted as an FYI.
