Migrate MOSS 2007 to MOSS 2010

1. I have MOSS 2007 installed on one site (3 server farm). I want to migrate this to MOSS 2010
2. I want to implement MOSS 2010 across two sites (disaster recovery)

Is the second farm going to be at another location?  If not, I don't see the point.  High Availability can be achieved at all levels of SharePointn without a second farm.

The second farm will be in a different wan site.
Ok good.  Just a few thoughts:

-SQL instances must be synced
-Both farms must be on the same version / patch level.  Any updates applied to one must be applied to the other.
-Any custom wsp's deployed to one must be deployed to the other.

Best way to implement the SQL syncing is through replication.

a little issue: we have 5 subsidiaries. In the MOSS 2007 site, we have one site collection and 5 sites to represent each subsidiary. We want the new farm to contain 5 site collections, one for each subsidiary. Also we want MySite separated. how do I backup sites and restore to MOSS 2010 Production and DR site?

I'm awarding the points to you because we've tested most of your suggestions in a lab environment and they were perfect. The only part we are yet to test is the log shipping.
