sql server 2008 backup questions

I have recently used sql server 2000 and have now migrated to 2008.  I am trying to set up a maintenance plan and I have a couple of questions.

1) I don't see a "Maintenance Plan" option.  I do see a "Backup Devices" folder under "Server Objects" but it is empty.

2) One of my databases does not have a "Transaction Log" option under "Backup Type", just "Full" and "Differential".

3) For my databases that are supporting web sites, what is the best procedure in terms of keeping them functioning in terms file size growth, etc.

Very informative.  Thank you!
I don't see maintenance plan as an option.  Is it because I am using sqlexpress or because I upgraded from 2000 using the "attach" approach?
