Windows Server Perfmon capturing (Exchange)

I have Windows 2003 and Windows 2008 Servers running Exchange 2003 and 2007 respectively. I'd like to be able to capture some Perfmon stats to baseline their performance when we don't have any problems...I was thinking of running over a 24 hour period.

I've gone to the actual Perfmon tool and added the various counters. So far, apart from the default counters, I've added:

- RPC Averaged latency
- Messages queued for submission [mailbox]
- Messages queued for submission [PF]
- Database log writes/ sec
- Database Checkpoint depth

Are these worthwhile? Can anyone recommend any more?

Secondly, can I'm not entirely sure how to set the Perfmon so that it will run for 24 hours? I'm sure it's very easy but I just can't find the setting!
