Server 2008 Standard Security

I am an Admin for a medium sized company. We have about 100 employees. The environment consists of Standard 2008 domain controller, Exchange 2007 and Sharepoint 2010. Our file server is a Linux based SAN so the security auditing from Microsoft and the Linux don't mesh too well. My current problem is that I need a way to create a log for every file thats opened, read, updated, deleted etc. Both from the file SAN and from Sharepoint. Are there any 3rd party apps or OS built in options that will allow me to do this very easy ? If more info is needed in order to provide me a better solution, please let me know.

What version and floavor of Linux( centos, fedora, ubuntu, red hat ) is on your SAN. Check out snare
from sourceforge. Both linux and windows versions are avalable
