storing IMAP data in OST file exchange 2003 sbs2003

Hi All,
Was kind of forced to use gmail (google apps) for our emails by an administrative decision.  That said, is there a way to have gmail integrate fully with exchange?  (I have read many a posting here already, so please do not suggest that, I am NOT trying to hook up an iphone....)

Here is the issue.
1st, I notice that the imap protocol email I set up in the users outlook defaults to a pst file.  I of course, want all email to flow into the .ost file so it gets backed up on the Exchange server.  Possible?
2nd, if not possible, should I just chuck exchange? (and how to migrate properly?)
This is a small church office 10-20 users, no advanced exchage features being used that I know of.  We do use MS office suite, most 2003, a few 2010.

Looking into these, another question pops up,  User Experience.  Because of the fact that the IMAP account does not flow to the same set of folders in Outlook, it now makes the user have to manage two inboxes, etc, where pop mail flowed neatly into the same inbox.  Any ideas?  other issue is I noteced that it wants to flow the pst to a folder on the server's C drive, where I have major space issues already...
