How do I remove an disabled email account from a resource account?

I disabled a user mailbox who longer works at the company. The user was a receiptionist who received email notifications any time a resource was booked. Now I have users complaining that they are receiving undeliverable messages from this users account that is disabled.

I thought I found the answer when I right clicked on the mailbox, went to mailflow settings, delivery options, and removed the users name from the list.

Where is the option to have emails sent to a different mailbox when this resource, meeting room, is booked?
