Forwarded e-mail missing the e-mail address in the message body

I know this sounds strange, but I'm at a loss and could use a little help.
Just moved to an Exchange 2010 server, everything seems to be working fine.
I have a generic mailbox that collects mail and forwards it to another mailbox, which then forwards it to a public folder mailbox. This is working, the problem lies within the message. If someone sends us an e-mail to this generic mailbox, our call center would see it in the public folder and respond to it, but they are unable to respond because in the message the "From" is there, but only the name, not the e-mail address. Help please...
Should I set the up differently now that we are on Exchange 2010?
