Delete cached email Exchange user

Dear Experts,
We have a user that will soon finish to cooperate with our company.

We would like to save his email from exchange 2010 to somewhere, and we can use export-MailBox for it, but we don't know how to delete it also from his cached Outlook 2010.

The only way to delete mail from the users local computer is to delete the local .ost file and then remove the profile for Outlook via the Control Panel> Mail icon.

Depends on what you mean by remotely.

If you have remote access, then you can delete the file.  If no remote access, then as long as the Outlook profile and .ost file exists, then they can access the mail fairly easily.

as the user is connected with exchange 2010, if we remove all the email inside the mailbox on exchange server, when the client will sync, will not delete all?

Yes - if you create a profile on a computer in your office, export the mailto .pst then delete All mail, then empty the Deleted Items and Recover Deleted items, the next time they sync, their mail will be synced and removed from their computer.
