Copy of Emails

I need a copy of whatever emails are received buy to be send to as well, how do set this up in exchange 2010.

I have an application server that sends an auto responds mail from whenever applicants register on our website i need a copy of this mail to be sent to, can this be done?

ZombieAutopsy is correct.

You can forward any mail from any account towards one of your own and that way you would have a copy of those mails in your own mailbox. I suggest the link that ZombieAutopsy wrote down above.
