I am trying to create a calculated field in smartlist builder that will output the number of days between two dates.  Is this possible?

Yes.  I just set up a test to see if this worked using the Sales Transaction History table.  To get the difference between the GL Posting Date and the Document Date I used a field type of Integer and the following formula:

datediff(day, {Sales Transaction History:GL Posting Date} ,{Sales Transaction History:Document Date})

Is there anyway to get this calculated field on a smartlist that is built into GP, instead of doing it through smartlist builder?  Reason i ask, is i would like to add a calculated field to the receivable transactions smartlist.

I don't think there is a way to do this without customization (and not a simple one).  What you may be better off doing is using something like my view here: http://victoriayudin.com/2009/04/24/sql-view-with-all-posted-receivables-transactions/ 
and adding your additional calculations and whatever else you need in SQL, then using the view in SmartList Builder.  I find the flexibility of being able to code in SQL a huge benefit in SmartList Builder.
