SharePoint 2010 + Access Servise

Could any one let me know if Access 2007 can use the Access Services in SharePoint 2010 ?

Also, does anyone have any information of implementing the Access Services using Access database to retrieve data ?

No.
You need A2010 to use Access Services.  In Access , you build a different type of Access application (referred to as a web database) and it is that which , when published, utilises the Access services on Sharepoint2010.
