Need to archive exchange user's mail without them knowing it

Sorry if I asked this twice.  We have been asked by our legal dpt to archive daily the email boxes of two of our exchange 2003 users for litigation purposes.  How can I archive all messages daily for just these two users without them knowing it?  Is there a way through either server or outlook? Or is there a way to have all messages sent to and from these two accounts forwarded to another account without alerting them?

You cannot do individual journalling in exchange 2003 without 3rd party tools
