Good day,

i have ALOT  of log files underthat directory.  Every Log File is called:   Something like E0012327.log and they take 5MB of space each.. I have 2000 of these..  Is it safe to erase some?

No, these are your transaction logs.

You need to take a FULL backup using an exchange aware backup product.  If you re doing this and it's not flushing the logs then another option is to take a full backup, turn on circular logging, allow the logs to flush, turn off circular logging then take another full backup.
