Create another subdomain under our existing mail domain

We have a abc.com domain pointing to our Exchange email server.

We want to setup another mail server in China such that mail to xxx@cn.abc.com will go directly to the China Exchange server, without passing through our main Exchange email server. And keep two mails in these two domain completely separated.

What's the step to archieve this ?

if you specify the MX record for the new subdomain to point to the China mail server, mail will be directly sent there

Suppose,
 abc.com      --> HK Exchange server
 bj.abc.com  --> China Exchange server

So, john@abc.com and john@bj.abc.com will be route indvidually to each Exchange server. It will not go to HK even though bj.abc.com map the lower end portion of the domain, ie abc.com. Correct ?

if the MX records for abc.com and bj.abc.com are to HK and China exchange servers respectively
and there is no connectors/weird forward setups in place to send from China to HK
then yes, mail will not go to HK (because it will have no record to go to HK or any means to route back to HK)
