OK, well just install the new servers, then uninstall the roles from the existing server.

it doesnt matter which order you do them just remove them once the new ones are live.

You will also need to re-configure port 443 on your router/firewall to go to the new IP of the CAS server and port 25 to go to the new IP of the HUB server.

But what about the configuration of the roles on the old one. Do I need to take the configuration backup( if so let me know the procedure to export & import the backup) of the old one and restore that to the new one?

what configuration? The Client Access Server shouldn't have anything other than an SSL certificate on it.

The hub transport role will create new Receive Connectors which you will need to add Anonymous Users to on the Default connector.  The send connectors are an organisation configuration so this will be automatically picked up by the new server.

Where is EDGE at the moment? It cannot be installed on a server that already has other Exchange roles and it is designed to go in a DMZ for message cleansing.

Once you have the Edge Transport role installed you simply create an edge subscription as per: http://technet.microsoft.com/en-us/library/bb125236(EXCHG.80).aspx

Exchange will deal with the rest.
