Hi, I have a call center calling through voip and thus have quite a large number of calls going outbound.

Of which there are instances where the call gets cut off/dropped off while talking.

I'd like to know how to spot these from the wireshark captures and work out the reason behind this. What would wireshark show in the voip calls?

You will be able to see (a) when the RTP traffic stops for a given device and then (b) the termination reason (if any) or nothing if the link has just dropped. Depends a lot on your topology.
You may have high delay when a lot of calls are going on and one end may just drop the call through apparent inactivity due to packet delay / loss. Have you enabled QoS for your SIP traffic?
