You can configure mail to be forwarded to another internal user without the original knowing or forward to an external contact, again without the original user knowing.

Which are you trying to do?

Internally is by Active Directory Users and Computers? Properties for the Mailbox> Exchange General Tab> Delivery Options Button.  Select the internal user to forward to and select deliver to both mailbox and forwarding.

Externally - create a contact and then using the above location, forward to the contact.

I already set it up to forward all incoming emails to a desired location.  Trying to get it to auto BCC or CC on all outgoing emails.

Only way without the user knowing would be Journalling or a Rule on the client.
