I am joined to the domain but my Entourage is not connecting to our mail server. Is there anything specific that has to be enabled for Entourage to connect to exchange 2010?

Entourage 2008 isn't supported in Exchange 2010. You'll need to upgrade to Entourage Web Services Edition. http://www.macupdate.com/app/mac/6835/microsoft-entourage-2008-web-services-edition/
