Is Office 2003 Profession Edition installed on the server where you installed the MOSS 2003 and migrated the content to?  I am almost positive that is a pre-requisite.

Are there any other errors being generated in the event logs on the system?  Maybe under system or application?  Also, can you create a new datasheet and view it?
