How do you calculate the difference between two time fields in MS Excel to a value that is in minutes +/-

Hello,
I have two fields (a1 and a2) time format and I need to calculate the difference in the times to a +/- values in minutes (a3 value)

e.g.
a1 09:03
a2 09:07
a3 -3.75 (obviously the seconds field factored in here)

for example.
