Default the from field

I have a company that has one common inbox. The owner insists that everyone sends mail from this default account as well. How do i set the default to all be from one mail address? At present they have to show the 'from'     field then type in the address then send. The address shows up after three letters but it is still a pain. I would like all computers to automatically send form the one account. I am sure it is simple but i cant find the answer.
The server is Exchange 2007 - the clients are using Outlook 2007.

Oh - Not bad except that they don't all have the same rights to the same directories. May be a way around that because the file structure is on a different server.
