Edit the existing category name (outlook 2003)

.. without deleting the existing category.  I have many emails assigned to different categories, so if I delete the category all those emails would loose its category.  What I want to do instead is "edit" the exisitng category name.

Edit the category where: in the list of categories or in all the items that uses that category?

Keep in mind that editing the category name in the master list will not change it in the items assigned to that category.  

For Outlook 2003 the master category list is stored in the registry.  You can find it at

HKEY_CURRENT_USER\Software\Microsoft\Office\11.0\Outlook

The name of the key is Categories.
