How long are previous versions of files kept on the volume?

It depends. As the server takes a new shadow copy, the old shadow copies are purged when the size of all shadow copies put together reaches a maximum (which you can configure), or when the total number of shadow copies reaches 64, whichever is sooner.

So there's no set "a shadow copy lasts x number of hours/days".
