How do I store Japanese characters in a mySQL database?

I hav a client who needs a form that people will fill out with Japanese characters.  We are running Cold fusion and mySQL...

For most languages, you just need to set the table character set to UTF8
http://dev.mysql.com/tech-resources/articles/4.1/unicode.html

Then ensure you've enabled unicode in your CF dsn
1) Select  Data & Services > Datasources > (Your MySQL Datasource)
2) Click:   Show Advanced Settings
3) In "Connection Settings" enter:
useUnicode=true&characterEncoding=UTF-8
