We recently added a couple users with iPhone 4 connected to our Exchange Server with OWA ActiveSync. I have been noticing that the emails they send from the iPhone always appear as Times New Roman in Outlook. Is there any way to change the way it looks to Outlook users?

Unfortunately you cant change fonts for outgoing email, but you can change font size:
Settings->Mail,Contacts,Caledar->Minimum Font Size
If your devices are jailbroken I am sure you can find something in Cydia like FontSwap.
