What is the best way to determing the optiminal size of the pga_aggregrate_target?

let your system run with realistic loads for a while then check V$PGA_TARGET_ADVICE

"realistic" and "a while" are going to be determined by your database and application.
If you have fairly uniform load that occurs all the time you might need only a few hours to give the system enough time to gather useful information.

If you have peaks and valleys of usage and/or of different types of activities it will take longer.  There is no absolute number that will apply to all.

Is there a way to plot the inverse of sort area and see where the inflection point is?
where are you seeing sort area trending?

I don't see a column by that name in either of the views above in my db.

Are you referring to sort_area_size  v$parameter?

If so,  that's a single value,  there is no curve inflection for one point.
