How to add a signature in Exchange 2010 on Server

I would like to add a global signature to all my users from server side in exchange 2010.

do you know the macro for email adderss field?
What do you mean by that ?
If you mean display the email in the sig it is %%Emal%%

is there also an option for hte user to turn off the signature? or choose not to have it?

Ah no it is not possible for it to be controlled by the user
Well, you could create an AD Group for the signature users and only apply it if they are in the group...
