Upgrading from exchange 2003 to exchange 2010

Hey there,
We are adding a new 2008 server box to a current 2003 server domain.  Currently there is a 2003 exchange server on the domain handling all mail.  

We have updated the schema to the new 2008 version, and successfully DCpromo'd the 2008 box to the domain.

I am going to put in a new 2010 exchange server to the domain, so here is the 2 part question

1-What is the easiest way to install the 2010 exchange side-by-side with the 2003 and migrate everything to the 2010 exchange server?  No public folders involved.

2. What is the easiest way to get all of the 45 users outlook 2007 settings to change to the new exchange 2010 server from the 2003, or are we running around to all the sites changing the outlook settings manually?

2.) as soon as Exchange 2007 is installed the autodiscover service will be available and Outlook will see it straight away. All your users need to do is restart Outlook after the mailbox move and outlook will reconfigure itself to point to the new server
