PTP VPN

I want to set up a new PTP VPN from our office to our Colo facility. I am trying to set up DFS to replicate file shares to a server on the other end.

How can I accomplish this?  Do I set up a VPN on a cisco/netscreen or on the server direclty?

I would set up the VPN on the edge devices, not the servers themselves.  But you can restrict the encryption on the edge devices to only encrypt between certain hosts if you don't need to encrypt any of the other traffic.  

I can't help you with the Netscreen config, but I can with the Cisco side.  Let us know what the devices are and we'll try to help.

What kind of Cisco device can I use? Does it have to be a router?

Router or firewall.  Generally speaking, switches don't support IPsec.
