Stopping uneeded services in Windows 7 and Server 2008

I'm looking at stopping/disabling default services that are installed in windows 7 and server 2008 that are not needed.  What services are safe to stop and are there any good websites that give an idea on what services can be stopped?

bnussbaum--Services do not use much in the way of resources or delay startup to any great extent.  So many people suggest leaving them alone.
However, if you want to disable some here are two references also used to have suggestions but the site for Win7 seems down.
