Network Administration, Policies, Procedures

After being away in the programming relm for a while, I'm back to my roots in Network Administration.  The person before me was very lax in writing policies and procedures.  Ok he never did them.  There is my pain point.  What articles/advice do you have?

Get snagit and make a movie to perform average tasks. You can record voice while doing your tasks so there is additional reference material when "cutting" the movie into manageable chunks. Assign an Associate Tech to go through the movies and make screen shots of the movie frames with new info on them. Again with snagit, you can draw arrows and highlight with the built in editor.
