Can't remove Exchange 2003 - One or more users currently use a mailbox store on this server
Cannot remove Exchange from server because
- One or more users currently use a mailbox store on this server
After I did the migration over to Exchange 2010 I was left with 5 users that had zero items
Not sure what to do now. I can't remove them

More info? Did you open services and shut down Exchange? If it's on a server that will no longer host any exchange you are free to shut down all exchange services, delete the data files and uninstall.

everything went ok on the migration
I can shut down the services and delete (will move) the data files but wil that still allow me to remove exchange through the add/remove programs.

Ok, just tried that and I get the same message
The component "Microsoft Exchange Messageing and Collaboration Services" cannot be assigned the action "Remove" because: - One or more users currently use a mailbox store on this server. These users must be moved to a mailbox store on a different server or be mail disabled before unintalling on this server
