chmod joomla using fireftp

So,

Whats the secure way to chmode Joomla's folders using fireftp?
In the documents it says to set the folders permissions to "writable"... the only way I can achieve this is by changing the chmod to "0777"

This can't be secure I think. As I remember that my site was hacked once and some say its cause of my chmod. What should I do?
