SMTP Relay to Exchange

I have some scanners that can scan to email and want to use email enabled lists to receive the documents. Right now the scanners go to an email address on our Exchage server which then forwards to a contact which is an email address on a email enabled document library. For some reason, the email gets wrapped in an .eml, processed by the library and goes away. If I set the library to save the entire email, I get the eml without the PDF attachment that was scanned.

So, I tested just having the scanner point SMTP to the sharepoint server and that works great except now my internal users can't scan to their Exchange email accounts.

Does anyone have a solution where usign my current method (sending to Exchange first) will retain the PDF. If not, how can I get the Sharepoint SMTP server to relay any email destined to our Exchange email addresses to Exchange.

Note: Emailing directly from Outlook works fine.

I have to give the scanner an SMTP server for scanning so if that is the exchange server, will it send it where it needs to go do you think? There is a send connector to the SMTP server. Hmm, I thought I tried that but am not certain, I will try again.
Ended up scanning directly but can't scan to exchange now. This is the best solution for us though.
