Removing last Exchange 2003 server

We have an Exchange 2003 server.  We just moved to a Hosted Exchange Solution so there is no longer a need for any Exchange servers in my domain.  What is the best recommended way to do this?  Normally I am removing an Exchange server and ther is a new 2007/2010 server in it's place.  If Exchange is no longer needed in the domain, is there an easy way to decommission this thing?
