I don't have Outlook 2010 installed in front of me currently, but does it have an Account Settings window similar to what prior versions of Outlook have had? For me in Outlook 2007, while I cannot have more than one mailbox connected in Exchange, the "Account Settings" dialog box gives the option to set a particular box as Default.
Another option would be to basically flip the profile configuration; rather than having the user log into their mailbox and see Recruitment as an additional mailbox, they'll have to log into Recruitment and see their mailbox as an additional mailbox. Outlook is going to work with the default "From:" address as the connected mailbox (primary in profile).

What I mean by that is your user currently has an Outlook profile for "Joe User", with "Recruitment" as an additional mailbox. As such, anything done in Outlook assumes "Joe User" unless you specify "Recruitment" should be used.
What I propose is to instead create an Outlook profile for "Recruitment" on that system, with "Joe User" as an additional mailbox. This way, everything will be assumed to be "Recruitment"'s task/request, unless you specify "Joe User". This will let mail be addressed and sent without any adjustments to the "From:" address, as "Recruitment" would already be the context.
You'll need to make sure that "Joe User" has full rights to "Recruitment" for this to work, so they can connect and authenticate as a valid account on the mailbox login.
