XenCenter CPU 100% at 11:30 every day

My Client is running XenServer 4.1 on 1 Host with Two Virtual Server Win2003. Every day at 11:30 one of the 2 VM's (that runs MSSQL) CPU goes to 100% and users application that connects to it fails with errors.. A ping test only return's a ping every 5th or 6th try. Needless to say users of the application that conencts to SQL are upset. i watched it today happen and It was so bad that I couldn't even get the task manager up to see what was running and taking up the resources.  So my question is; Is there a good app to monitor what applications are running and their CPU/memory usage that gets logged to view later?

perfmon will do the job for you - or if it is that reproducable - every day at 11:30 : you may start Taskmanager at 11:29h (or before) and let it show the running processes ordered by cpu-usage.
Then you may see which process consumes the power...

I tried the other solutions mentioned and although a good start, not what I was asking for...
