IEOOP is a module by IBM.  Is this an IBM computer/laptop or are you using Lotus Notes ?

I doubt that your problem is IEOOP as this is a module that Lotus notes uses.  She probably just happens to have email open when the machine locks up.
Have you run a virus scan?  Have you defragged the machine?
Deleted temp files and all that cleanup stuff?
Do you guys have a registry cleaner utility that is in your IT bag of tricks, I'd use that as well.
First thing is clean up her machine and see if the problem recurs.

If she won't be patient through your troubleshooting and cleanup efforts then give her a loaner machine while you work on hers
