How to identify the files/folders/emails which are copied/deleted from the workstation ?

I would like to know, is that possible in windows XP / windows 7 to check , if the user copied/deleted files from the server / local disk ?
How can we restrict them from copying/deleting ?

    Just to add, if this is really going to be an issue, you should set up some form of logging.  Microsoft provides a logging solution for their systems but there are ones you can purchase as well.  Here's a link for setting up microsoft logging:
