I am developing a VSTO Excel Workbook project for a client. I have VS 2010 and Office 2010 and 2007 on my machine, but the client only has Office 2007 on theirs. When I closed my project and reopened it it converted it to a Ezcel 2010 Workbook - how can I stop this?

I answered a similar question here:

Basically what happen is that VS2010  has this option: (Under tool | options and  Office tools| Project upgrade)
"Always upgrade to installed version of Office" checked

This option forces any VSTO project  to update to the latest installed version of Office in your PC. You need to uncheck this option to avoid VS forcing your project to upgrade
