mail routing through wrong server

I have been dealing with a broken spam filter for a while now.  In the process I had to build a new mail server.  It now seems that mail is being routed through my old exchange 2007 box.  When I look at headers of Spam, it shows the mail being received by the other box (not the correct one).  How do I make it so mail is routing through the correct machine?

If you dont need 2007 server anymore, uninstall it.

I have a new question.  I have two exchange 2007 servers that have have all three roles.  It appears as though mail is now going out through another server.  Is there a way to have each server send out mail through itself?  
Not unless you change their IP addresses and put them in their own AD sites. Any HT can send/receive messages from any HT in the same AD site.
I mean any HT can send/receive from any MB in the same AD site
