When viewing the GAL from Outlook. There is the GAL which shows everything and everyone that has email address  (Users,groups,contacts,etc..) and you can sort the GAL by selecting just Users or Contacts, or groups which are part of the GAL too.
But when using the OAB, we can view only the GAL as a whole, we cannot select just users or contacts, etc,,,
Why is that?

OR I could be wrong, it could be that  the users, contacts, etc... address list  are  default address list (created by exchange system by default), but separate from the default GAL.

in other words when you are offline and open the OAB, do you see contacts, groups, users, etc... in the OAB or just users?

When in online mode, you can see various Exchange address lists. There is the Global Address List, which contains all mail-enabled objects in the organization. There are additional default address lists that are filtered by object type (users, contacts, groups, etc). You can even create custonm address lists in Exchange. When you are in offline or cached mode, you don't have access to the various address list in Exchange. You only have access to the offline address book, which, by default, only contains a copy of the global address list. If you want to add additional address lists to the OAB, you can do so by going to Organization Configuration - Mailbox - Offline Address Book - Properties - Address Lists.
