How to configure Outlook during Exchange 2003 to 2010 transition period?

Current environment: Windows 2003 AD, single Exchange 2003 server (exch2k3).

Plan to upgrade to Exchange 2010 (exch2k10). During the Exchange 2003 to 2010 transition period, how will Outlook clietns respond to the following changes?

Current Exchange 2003 (exch2k3): mailbox Allan, mailbox Brad, mailbox Charlie
User Allan: Outlook 2003
User Brad: Outlook 2007
User Charlie: Outlook 2010
All Outlook clients point to exch2k3.

Step#1. I install Exchange 2010 with CAS/Hub Transport/Mailbox roles (exch2k10). No mailbox is moved over to exch2k10.
Q#1. Do we need to do anything to users Allan, Brad, Charlie?

Step#2. I moved mailbox Allan to exch2k10.
Q#2. Do we need to do anything to users Allan, Brad, Charlie?

Step#3. I also moved mailbox Brad to exch2k10.
Q#3. Do we need to do anything to users Allan, Brad, Charlie?

Step#4. I also moved mailbox Charlie to exch2k10.
Q#4. Do we need to do anything to users Allan, Brad, Charlie?

Step#5. I retired Exchange 2003 (exch2k3) and run everything on exch2k10.
Q#5. Do we need to do anything to users Allan, Brad, Charlie?

just make sure the outlook 2003 is fully patched to the latest version and in settings the checkbox for encrypted connections is on

Can you comment on each question if anything needs to be done at each step?
if you do what I outlined prior to the upgrade it should connect ok

outlook 2007 and 2010 should work without any error after migration

just a quick response.  When the mailbox gets moved to the new server, The Outlook program should read the server info and know that the mailbox is moved to the new server and it will automatically connect to the new server.
So, you shouldn't need to do anything in Outlook.
as mentioned before, In Outlook 2003 you need to enable the Encryption to be compatible with Exchange 2010 (it just a checkbox inside of the Outlook profile settings).

Steps 1, 3, 4, 5,  - you don't need to do anything
Step 2 you need to enable encryption on Allen's outlook program.
