Turn old Server 03 into NAS

I have an old server with Server 03 standard on it and 146 gigs of SCSI HD space.  I'd like to slap it full of Ultra-320 drives and make it into a NAS.  What is the best way to accomplish this?

I've debated just using the extra space as a network share but I'd like feedback.  MY RAID card is a 39320-R Adaptec SCSI card.

You could use windows storage server edition or go for a (free) linux variant:
