Can you drag and drop email in an Outlook folder still on the Exchange server to one of my archive folders?

Or do I have to "archive" using the wizard?

    Nope, no need to use Archiving at all.  You can drag and drop email from Exchange Mailbox folders to folders in any PST including the one used for archiving.  

    You can also right click and choose "Move" rather than drag/drop of of if you prefer, and this method is also more convenient if you are moving multiple messages (Shift+click or CTRL+click to select mutiple), or if you have many folders and would have to drag down very far to move the messages.
