SMS Time Stamp

I have an iPhone 3GS with OS 4.3.2 loaded. The SMS messages don't appear to show accurate time stamps, just selected ones and at sizeable deltas. Is there any way to view the actual time a message was sent and received. This is important for some analysis I am doing

Not sure you can do this with the standard SMS app, if you dont mind jailbreaking your phone use BiteSMS which has this feature.

Its a process which allows you to install software not authorized by Apple

Then install BiteSMS from Cydia

There are lots of video's on Youtube about Jailbreaking to.

If I do that will Apple pick it up and cause any problems for me that I need to be aware of?

Apple wont detect it but if you need support from Apple just restore the phone to factory settings in iTunes, it leaves no trace.
