SBS 2008 Update

The SBS 2008 was configured by someone else, what is happening is that when I go to "Windows Update" and then choose "Change Settings"; it is set on "download updates but let me choose whether to install them" and everything else is grayed out.

FYI: Windows Server 2003 windows update setting were also changed to the same as the SBS 2008 after I added it to the domain.

How can I disable the option of having everything grayed out?

No doubt this is being set by a group policy on the domain, you need to look at the group policies defined on the domain controller.
