It depends on the version of OCS you wish to install.
Office Communication Server 2007 (somethings referred to as OCS 2007 RTM) is 32-bit only. So Windows 2003 is the best OS to install it on.
Office Communication Server 2007 R2 is 64-bit only. So Windows 2003 x64, Windows 2008 x64 and Windows 2008 R2 are supported.
Lync Server 2010 is 64-bit only. So only Windows 2008 x64 SP2 and Windows 2008 R2 is supported.
So if you are shooting for OCS 2007 than an x86 Windows 2003 server is fine. Just make sure you have 2007 and not 2007 R2.
Thanks,
Richard

They both do a pretty good job of explaining the steps. Some gotcha's are that OCS assumes that you have a properly working internal Certificate Authority. It can be done with a public certificates but I find it easier with an internal CA.
Let me know where you get stuck on the install and I can help out.
Thanks,
Richard
