I know how to do Outlook 2010 Calendar sharing, but  how do I setup a calendar for a conference room on the SBS 2008 Server for Secretary's to access and add appointments to?

You actually have several choices. The two that I find the most compelling and forward-looking would be as follows:

1) Create a calendar in SharePoint. Outlook 2010 has great SharePoint integration that, combined with SharePoint's granular security model, would allow users to view the calendar in Outlook, via the web, or both.

2) Create a "resource" mailbox and grant permissions on the mailbox based on security groups. Similar to above, but doesn't use/require sharepoint. Downside is that it requires a bit more Exchange knowledge.

Once created, that is a simple copy procedure.
